Collector of Souls was born from legend — a place where fire, fermentation and fate intertwine.

Within its walls, Beelzebub Brewing Co. was forged, its rebellious spirit taking shape at the heart of the house.
Today, Beelzebub stands as the name of our venue, while Collector of Souls lives on as our spirits line and the legacy behind our Cellar Door Collection.
This is the evolution of a place built on craft, character and conviction.
The Legend
Legend has it that the Distiller of Collector of Souls, known simply as The Collector, had a unique gift for crafting spirits that seem to capture the essence of each patron's soul. With every sip, customers experienced a journey of flavours that stirred their deepest emotions and memories.
Over the years, as word of mouth of the mystery Distiller’s gift spread, the Collector of Souls Spirits range became a sanctuary for those seeking solace or inspiration. Artists found muse in the swirling colours of their drinks, while lovers whispered sweet nothings over glasses of alluring elixir. Even the most hardened souls couldn't help but be moved by an unexplainable magic.
Some whispered that The Collector had made a deal with the devil to acquire his extraordinary talents, while others believed he was a guardian of lost souls, guiding them to redemption one drink at a time.
Regardless of the truth, one thing was certain- as long as there were souls in need of a drink, The Collector would be there, ready, pour in hand, to weave his magic once more.
The Evolution
Over time, the enigmatic Collector — once known only for his ethereal spirits — began to expand his craft beyond the realm of distillation. From the same hands that wove magic into every bottle, a new creation emerged: Beelzebub Brewing Co., a range of artisanal beers born from fire, flavour, and folklore.
Each brew, carefully conjured by The Collector, carried the same mystique as the spirits that came before it. Notes of citrus, smoke, spice, and dark sweetness danced through every pour, flavours that spoke of forgotten dreams and untold stories. Some say these beers were forged not just with hops and grain, but with something far deeper — a spark of the otherworldly.
The Present
​​Beelzebub Brewing Co. was born inside the walls of Collector of Souls.
What began as a place to gather — to eat, drink, and linger — soon demanded something more deliberate. From within Collector of Souls, Beelzebub Brewing Co. took shape: a beer line forged with patience, intention, and a quiet refusal to play it safe.
The beers didn’t stay in their lane. They took on a life of their own. As the brewing grew, so did the name behind it. Beelzebub Brewing Co. now stands at the door — a brewery first, unapologetically so — while Collector of Souls remains embedded at the core of the experience.

Today, Collector of Souls lives on as our spirits line; a cellar door, tasting lab and gathering space where cocktails are poured, stories are shared, and the past is honoured. It is where the spirits reside, where time slows, and where the original soul of the place still speaks.
